Madrid Fusion Manila ended last Sunday, and for those of us who were lucky enough to be part of it, the experience was exhilarating and eye-opening. I think it’s something we will be talking about for a long time and be calling as the Philippines’ coming out party to the food world. There’s so much I want to share with you about the “Trade Exhibit, the “International Gastronomy Congress,” and the local and Spanish chefs I was privileged to interview. But my thoughts still need to be sorted out, so I will start by sharing with you some of the most important things I learned.
